Imre Györgykovács: The rewards of patience
There are wines that have an immediate impact on you: they are spectacular, an instant hit and they become talk of the town. Then there are those more subtle creatures which we know to be valuable and exceptional, but which we hardly ever talk about.
Then something happens: a tasting, a coincidence, a mood takes us and they return to the limelight again. This is precisely what happened with the wines of Imre Györgykovács when we tried them at a recent workshop. While initially they received good evaluations, they didn't quite blow anyone away. Then we put the open bottles back into the fridge, and we sipped them again a few days later.
And surprise, surprise, they hadn't lost anything of their vitality but they'd opened up and transformed into really big wines. They rewarded us with the taste of real experience and experimentation.
These wines can spend many years in the bottle, and they will get even more complex but we don't have to put them away by any means. We just have to pay attention to them. Should we decant white wine? Sure, why not. How about keeping a bottle of white wine open in the fridge for several days? You bet.
