Bolyki János - according to himself - became slowly obsessed with wine. In 1998 he started deploying grapes, while obtaining a viticulturist diploma. If we step in his really compelling cellar carved in stone in Losonczy-valley, we instantly feel that this humble smiling young man is serious in what he is doing between the 30 meters high walls.
His Bikavér consists mainly of Kékfrankos, the Burdeaux grape, a little Portugieser, Zweigelt and Blauburger, as is the custom of Eger. Before the blending the grapes develop for 15 months in new 5-10 hectolitres casks.
Balanced, nice wine which really got to us with its spicy, playful aroma, sitting under the walnut tree in front of the cellar.

BT: What happened to you nowadays, János?
BJ: I am just coming from the cellar, we are harvesting but we are at the beginning, still almost the two-thirds of the growth are on the vine-stocks.
BT: The Zorróék, the Nem lát, nem hall, nem beszél ... Two really astonishing names.
BJ: It is true. The name of the Zorróék, which is a blending of a kékfrankos and a kadarka, just came accidentally; the two maskers on the label refer to the name. The Nem lát, nem hall, nem beszél is 100% kékfrankos and got its name after a special occasion: in 2005 deaf, blind and deaf-mute children harvested on me. However they did not participate in the harvest of 2006 but I promised them that from the income of the vintage of '05 we would build a playground with wooden toys. And we would bring the name further.
BT: If we take a snap shot of the estate what would you enlarge of it?
BJ: The estate is 25 hectares big, it is enough. The selection is more or less developed, from 2008 there will be a new sauvignon blanc and I can also tell that the mentioned kékfrankos of 2006 became that I would have liked it to be: full-bodied with long and chocolate-sour cherry aroma. This latter is especially important since I am very fond of sweets.
BT: What would you like to fulfil in any case?
BJ: I would like to make more concentrated wines. To enlarge the cellar, buy new casks, in order that my wines can ripen longer. I am at the beginning of the way, in every year we can learn something new, and luckily in Eger a lot of viticulturists work who help pleasantly.
