William Fčvre and his family belong to that proud minority in Chablis who owns a family property with own plantation. Thereabouts, like it is usual in Burgundy, the so called big "negociants", the commercial houses play the lead, which do not have their own properties (but they have not got too much) but they made their own wines from the bought up wine or grape and under their names they sell them. The establisher is Monsieur Fčvre whose family has been living for 250 years in Chablis and bottled their first wine in 1959. His aim from the beginning is to make wines which can express the characters of certain fields. In favour of this he was buying plantations in the most excellent premier and grand crue lands. The William Fčvre Domaine now owns 47 hectares that are located entirely within the borders of the "historical" Chablis, namely it is within the borders of Chablis before widening in the 1970’s. Everything in the wine making serves quality: manual harvest, cluster selection, short and really patient pressing, then seasoning - keeping on deposit - in steel containers (Petit Chablis and Chablis) or in French oak casks (Premier and Grand Crus).
