The Dhondt-Grellet estate is currently managed by 30-year-old Adrien Dhondt, who cultivates the almost twice as old vines with biodynamic preparations, uses his own compost, and ploughs the rows with his own horse. Its entry-level wine, Dans un Premier Temps, is a blend of several premier cru areas, and is 50% Chardonnay, 30% Pinot Noir and 20% Pinot Meunier. The base wine was fermented in tanks and in used barrels, then the 2019 vintage base was supplemented by 30% reserve wine, which the family had been ageing in one of the old barrels in the cellar since 1986.
