We first heard Etienne Calsac’s name last spring. In a bustling bistro in Reims, we entrusted ourselves to the knowledge of the staff: we asked them to show us something from a young, upcoming winemaker from the region. Then, one of the first organised meetings on our next trip took us to the Calsac winery, which is built above ground with a New World atmosphere and plenty of natural light. Etienne’s family has always lived from grape growing, and the grapes from most of the family’s plots are still pressed at Veuve Clicquot, but since 2010, they’ve also been making their own champagne from four hectares. Etienne is up to speed with the happenings of the new generation working in the wine region, he manages a well-planned cellar, ploughs with horses and harvests from the best terroirs of Avize. The entry-level wine of the winemaker who works almost exclusively with Chardonnay is L’échappée Belle.
