When talking about the Champagne region, people always list three grape varieties (Chardonnay, Pinot Noir and Pinot Meunier), but the winemakers there count with a total of six. The other three, rarely mentioned varieties, are: Arbane, Petit Meslier and Pinot Blanc, which are scarcely planted across the region, although Etienne has planted a few rows of each, and the unconventional wine of their blending became Les Revenants.
Organic growing, spontaneous fermentation in one barrel, with long settling, bottling without filtering or fining. Secondary fermentation under the cork, manual disgorging without dosage. Reduction, minerality and energy on the nose, while the palate spreads out broadly with lively acidity and lingering flavours. One of our most special wines from Champagne.
