What is a Provence rosé like when it's gently sparkling? The question is answered by our old favourite from Figuière, where they press the juice of the Grenache and Cinsault grapes from whole bunches, then the wine is fermented first in tanks, later in bottles, on site. It was freshly disgorged after nine months of ageing. Powdery colour, restrained fruit with subtle mature notes and stone fruits. Sparkling, elegant, delicious.
