It stands apart from the crowd – this Sous Bois (pronounced ‘soo-bwah’) spent every single day in barrels until bottling, making it a true rarity in the world of traditional method sparkling wines. A blend of the three classic Champagne varieties: 43% Chardonnay from grand cru vineyards in the Côte des Blancs; 29% Pinot Meunier from the Vallée de la Marne; and 28% Pinot Noir from Montagne de Reims, Aÿ and Mareuil-sur-Aÿ.
The base wine is two-thirds from the 2017 vintage, with the remaining third comprising reserve wines from multiple vintages, which stretch back as far as 2006. Barrel-fermented and aged for five years in bottles. Its crystal-clear, radiant golden hue appears to glow in the glass. The bubbles rise in a subtle, elegant line – fine-textured and vivacious. On the nose, layered aromas of fresh pastry, citrus zest and stone fruit unfold, gradually evolving into nuanced hints of coffee and bergamot.

Rich yet refined on the palate – a seamless weave of brioche, clarified butter and sweet spices, draped in a silken texture, with the depth and elegance of its ageing rendering it complete. A true grande cuvée champagne.
