The latest addition to Adrien Dhondt’s range, and also our favourite. The grapes for this wine were harvested from Champagne’s rarely mentioned fifth sub-region, the Côte de Sézanne. The family has always owned vineyards here, where the silex soils and particularly sunny, warm sites produce a markedly different character from Adrien’s parcels closer to the Côte des Blancs. For this reason, he decided that this area – previously used as the base for Dans un Premier Temps – would now be released as a separate bottling. A blend of 90% Chardonnay and 10% Pinot Noir from 45-year-old vines. The base wine was fermented in stainless steel tanks and barrique barrels, with 30% of reserve wine blended into the 2021 base wine at bottling.
