A selected Blanc de blancs from one of the great figures of the style, Étienne Calsac. The Premier Cru village where this parcel is located is called Bisseuil, which is practically at the geometric centre of Champagne. Beneath the nearly 30-year-old Chardonnay vines, the soil is permeated with chalky limestone, as is also shown on the label. After spontaneous fermentation and malolactic conversion, the wine is bottled unfiltered, then aged for nearly two years in bottle. Yellow fruits and mineral notes, with explosive, fresh, pastry aromas. Apricot, yogurt and citrus. A great experience.
