This Blanc de Noirs – a white champagne made from 100% Pinot Noir, is a real exception on the otherwise Chardonnay-focused estate. We have to go all the way to Aube, the southern sub-region of Champagne, to find this parcel from which Etienne had long wished to make a separate champagne. The soil is Kimmeridgian limestone, the fermentation starts spontaneously in barrels, the second fermentation ends in the corked bottles.
