We last visited this grower champagne house in June 2022, and left with this wine in mind. Its strong, pristinely pure, inimitable character became embedded in everyone's mind. Ay is considered as one of the best places of growth of Pinot Noir. The Béreche family cultivates a 0.6-hectare parcel here, which is where this champagne comes from. Harvested from at least 40-year-old vines, 80% Pinot Noir and 20% Chardonnay make up the base wine. After the unfiltered bottling, the bottles are sealed with corks for the secondary fermentation, followed by a patient wait of 78 months. It’s one of the best grower champagnes that we know.
