Today, the Dhondt-Grellet estate is managed by 30-year-old Adrien, who cultivates vines that are almost twice as old as he is with biodynamic preparations, using his own compost, and ploughing the rows with his own horse. The Chardonnay grapes come from a grand cru parcel planted with 55-year-old vines. The base wine of the 2018 vintage was fermented and aged in used barrels, then 30% réserve wine was added to it before bottling. It was disgorged in May 2021.
