Today, the Dhondt-Grellet estate is managed by 30-year-old Adrien, who cultivates vines that are almost twice as old as he is with biodynamic preparations, using his own compost, and ploughing the rows with his own horse. His entry-level wine, the ‘Dans un Premier Temps’ is a blend of several premier cru plots, with 50% Chardonnay, 30% Pinot Noir and 20% Pinot Meunier. The base wine was fermented in tanks and in used barrels, then the 2018 vintage core was supplemented with 30% reserve wine. It was disgorged in July 2021.
