In these cases, the vision and experience of Chef de Cave Vincent Chaperon plays an exceptional role. In the later-than-usual vintage, 10 years of ageing on the lees brought the slow transformation, as well as the elegance inherent in the vintage.
Thanks to Dom Pérignon’s grand cru and premier cru vineyards with their chalky soil, perfectly ripe, full-bodied Chardonnays from Côte des Blancs and dynamic-acidity Pinot Noirs from Montagne de Reims were delivered to the cellar despite the drought and dryness.
Precise, elegant and intense aromas with a medley of citrus fruit, vegetal notes and spices. Eucalyptus, mint, apricot, orange blossom, pepper, cardamom and roasted aromas. The palate is elegantly simple, refined and silky, long-lasting and salty.
