The seven-hectare family vineyard is looked after by Raphaël, and they sell almost the complete amount of the crop to larger estates, although from 2-3 parcels, they also make their own traditional method sparkling wine in the cellar of the family’s old holiday home (Domaine de Bichery). The organically cultivated grapes are harvested from old vines, then pressed 400 metres away at Raphaël’s brother’s, Piconnet’s cellar, then the cuvée and the taille fractions arrive together at the rustic cellar of the stone house built in 1760. Old beams, non-plastered stone walls, a few of tanks and 10-15 burgundy barrels. That is where the winery's annual 5,000 bottles of sparkling wine is made. The must ferments spontaneously, ages in barrels and tanks, and is bottled without fining or filtering. Bichery wines are characterized by mature flavours, an oxidative character and a broad, lees-aged structure. Their parcel-selected Blanc de Blancs, called l'Envers, was harvested on September 4, 2017, its spontaneous fermentation ensued in tanks and used barrels, then after a short ageing, the base wine was bottled without filtering or fining. Ageing lasted until disgorging in February 2021, after which the bottles were sealed without dosage.
