A new addition, a small batch single-vineyard champagne from one of the smallest wineries in our foreign selection. The blend follows the proportions of the grapes grown in the vineyard: 80% Pinot Noir and 20% Chardonnay. All the grapes were harvested on the same day, August 29, 2018. The base wine was spontaneously fermented in used French barrels and was bottled without filtration or fining for secondary fermentation. Disgorgement took place more than four years after bottling, in the spring of 2023.
