A new area and a new champagne in the Egly-Ouriet range. Bisseuil is a premier cru village on the border of Ay, in the heart of the wine region. It also stands out of the line based on its varietal composition, as it’s the only Egly-Ouriet champagne which is dominated by Chardonnay, not Pinot (70%). The backbone of the base wine is the 2017 vintage, which is complemented by 40% of reserve wine from the 2016 vintage. It’s ethereal and complex, like a ripe puer tea. Salt, soy sauce, smoke, matches and several other things on the nose. The tasting experience is almost meditative.
Fermentation and ageing took place in used barrels, it was bottled in 2018, and disgorged after 4 years of bottle ageing.
