When it comes to the Champagne region, we usually list three varieties (Chardonnay, Pinot Noir, Pinot Meunier), but Étienne considers a total of six. The rarely mentioned other three are Arbane, Petit Meslier and Pinot Blanc, which are scarcely grown in Champagne, and Étienne planted a few rows of each. Their unique blend is Les Revenants. Organically cultivated, spontaneous fermentation in barrels, long settling, bottled without filtering or fining, secondary fermentation under cork. Manual disgorging, minimal dosage. The nose has reduction, minerality, and yellow fruits, while the palate is broad and voluminous, with lively acidity and a long finish. One of the most special champagnes in our selection.
