The parcel-selected Blanc de Blancs from Étienne Calsac is a newcomer in the selection. The premier cru village called Bisseuil is located almost in the middle of the wine region. Here, Étienne Calsac cultivates the Les Rocheforts plot, with 100% Chardonnay vines that are over 30 years old. The soil is covered with chalky limestone, which also appears on the label. Following spontaneous fermentation and malolactic fermentation, the wine was bottled unfiltered, followed by nearly two years of bottle ageing. It’s edgy, explosive, fresh, with yellow fruit and cake aromas. A great experience.
