A true rarity, this is an exceptional Blanc de Noirs from a predominantly Chardonnay-focused estate, made from a single vineyard of 100% Pinot Noir. The vineyard is located in the southernmost sub-region of Champagne, in Bligny, where the Kimmeridge limestone, familiar from Chablis, dominates. Spontaneous fermentation in barrels, unfiltered bottling, second fermentation in corked bottles, followed by nearly three years of ageing. While the L’échappée Belle and Rocheforts (Etienne's two Blanc de Blancs) are about freshness and sparkling acidity, Val l’Hermite is about the excellent aged character and deeply impactful flavours patiently waited for. Biscuit, vermouth, anise, cinnamon. Bone-dry, mature, classic.
