Thanks to this, the estate has been able to remain in the hands of the family up until today, and the base of the Brut Réserve blend is compiled by the fifth-generation descendant, Hubert de Billy. For the second round of tasting, the president and the cellar master also join. However, the last nod to the final style is given by the family members of the fourth generation, by Christian de Billy and Christian Pol-Roger. Following pouring into the bottles, the Champagne that is waiting for disgorging ages at an exceptionally cool temperature of 9.5°C. The longer ageing time results in more finesse. It contains the three typical Champagne varieties in an almost equal proportion and 25% of it is réserve wine that is made from the base wines of the previous years. Ripe tropical fruit, slight yeasty notes, refreshing acidity, subtle spiciness on the finish.
