This parcel is the foundation of the estate and its earliest vineyard. It’s also the spot where Fabrice first started experimenting with his own method, which is that the secondary fermentation is carried out without cultured yeast and sugar. He has since perfected it, and the estate's bestseller is now made using the method he learned here. The Chemin du Bois is the lower, clay-soil parcel in the village of Mareuil-sur-Ay, planted 100% with Pinot Noir. The base wine was spontaneously fermented in used and new barrels, then it was bottled without sulphur a year and a half after the harvest. The second fermentation was followed by 5 years of bottle ageing, after which it was disgorged.
