Fabrice Pouillon harvests from six and a half hectares of his own densely planted land. The centrepiece of his cellar is a traditional, vertical Coquard press with no memory programs, just a few buttons and a winemaker who tastes while the press works for hours. Fabrice’s new wine, Grande Vallée, is made in a completely unique way. He replaced the selected yeast and sugar concentrate usually used for making champagne with the yeast and must he kept from the base wine, so the fermentation took place in a completely special way in the bottles. It was a risky game, but in the end something quite unique was created. 65% Pinot Noir, 15% Chardonnay, 20% Pinot Meunier. Dosage: 2g/litre.
