Deep flavours and maturity with precise, vibrant acidity, and a slow, rich mousse. At Vilmart, all base wines are fermented in barrels, and contrary to the average, the natural malic acid in the must is not allowed to go through malolactic conversion but is transferred into the wine – two fundamental steps mastered by only a few, including Vilmart.
The estate's iconic prestige wine, Coeur de Cuvée, is the passion of winery head Laurent Champs, who also conceived the idea for the first vintage.
A selection from the family's oldest plot, 55-year-old vines from the village of Rilly-la-Montagne. In 2016, the blend consisted of 80% Chardonnay and 20% Pinot Noir, with the twist that only the finest fraction of the pressing is used – this is the Coeur de Cuvée (1,400 litres of must from nearly 4,000 kilos of grapes). Spontaneous fermentation takes place in used barrels, followed by 10 months of ageing. The secondary fermentation in bottles was followed by more than 5 years of ageing before disgorgement in September 2022.
