The idea of traditional method sparkling wine has long been on the mind of the Csobánc winery. Their first experiment was made in 2008 from 100% Olaszrizling, but the finished product was lost, so they never got to taste it.
The first vintage, which is no longer completely experimental, was made from 2020, with a total of 956 bottles. Learning from the mistakes of the past, the entire process takes place in the cellar, from the preparation of the base wine, to disgorging and tirage, to ageing on the lees. The base wine, made from Furmint planted in 2016, was spontaneously fermented in 750-litre Stockinger barrels and aged until the spring of 2021. After 2 years of bottle ageing, the traditional method sparkler was disgorged in March and bottled with only 0.5 grams of residual sugar.
Mature aromas, clean flavours and pronounced bubbles. Just as you would imagine a Villa Tolnay traditional method sparkling wine.
