“Half of it is Furmint, half is Riesling. Ten years ago, I thought that we were going to try out things, experience and learn everything, but we will play with just these varieties. We possibly felt a bit of defeatism that comes from our nature: we didn’t want to compete with Champagne, but what’s more important is that we’ve been looking for pure, neutral and taut wines from our own soil, from our own sites. We started with Riesling, because it has enough acidity and elegance, then Furmint, as the Hungarian variety, entered. It’s a long-held obsession of ours to be identifiable and exciting, and Furmint is a good tool for that. For the base wine of a good traditional method sparkling wine – how it’s described in the textbooks – it’s a perfect variety. It grows on our sandstone, the leanest plot, it grows slower than the Riesling, it has a taut acid structure, one only has to get the harvest date wright with it.” Ottó Légli.

 

The must pressed from the selected Furmint and Riesling bunches grown on limestone soil was first fermented to still wine in temperature-controlled tanks, then in thick bottles to sparkling. Aromas of flowers, green apple and citrus fruit, nicely matured bubbles on the palate, a fresh acid feel and delicious saltiness. Following the two years of ageing, the bottles are always freshly disgorged in small batches.
