Carassia 773 is the estate’s prestige cuvée, made only in the best vintages. Following its 2018 debut, this is the second release and the next one will come only from the 2024 vintage. The name refers to a historical imprint made in 1773, which already marked the parcels from which the grapes for the traditional method sparkling wine still originate today.

The blend is 80% Chardonnay and 20% Pinot Noir, with 10% of the Chardonnay fermented in oak barrels and undergoing malolactic fermentation. The lees ageing lasted 36 months, and the dosage is 8 g/l – resulting in an elegant, fresh and refined style. The beauty of the 2021 vintage lies in the exciting structure of the acidity: explosively fresh, deep and creamy. Citrus fruits, green pear, ripe peach, brioche and subtle herbal notes on the nose and palate. The bubbles are fine and persistent, the texture silky and the finish seemingly endless.
