100% Chardonnay Blanc de Blancs Brut from the Carassia winery, harvested from a parcel that is meant for traditional method sparkling wines. From the harvest to bottling, every step of sparkling wine making is carried out in-house. In the case of traditional small bottles, the typical time of ageing on the lees is at least 20 months, and owing to this, mature and toasty notes can be discovered in it. Aromas of white-fleshed fruits, mostly apples, then peach and sweet bread appear on the palate with acacia flowers on the finish. A creamy mousse and a soft texture.
