A lot of richly flavoursome base wines of different characters fermented at the cellar of the estate, which were blended with the assistance of their winemaking expert, Jérome Legras. The Classic Brut was compiled from 50% Chardonnay, plus Pinot Noir, Pinot Meunier and a little Pinot Blanc. “There is no magic,” says Csaba Bereczki, Carassia’s cellar master. Only good raw material that is harvested at the best possible time, vinified with whole-bunch pressing, cold settling of the must for one day, and then fermentation with the already proven yeasts. Out of the estate’s three traditional method sparkling wines, this is the most complex, yet the easiest to drink. 

Two and a half years of bottle ageing, 8 g/l dosage.
