The sight of barrel racks, yellow pallet jacks gliding over polished concrete floors and well-worn ankle boots always evokes the spirit of New World wineries. This was certainly true when Előd Szijjártó slid open the steel door to his Etyek cellar. However, his range offers more variety than a typical New World selection, as Előd moves effortlessly between bottle fermentation and reductive winemaking.
During the first weeks of the harvest, his thoughts often turn to the great classic sparkling wines of the world. Working with varieties synonymous with Champagne, he ages his wines extensively in bottles and handles every step of production personally, much like a grower champagne producer.
In addition to his well-known Brut Réserve, the past six months have seen the emergence of a smaller batch wine – Blanc de Noirs. Initially appearing at tastings as dosage experiments or opened à la volée, the details fell into place in late November, when Előd disgorged this nearly 500-bottle sparkling wine made exclusively from his favourite variety, Pinot Noir.
The 2021 was made with whole bunch pressing, fermentation in used barrels, followed by 7 months of ageing in the same barrels. Secondary fermentation in bottles was succeeded by 30+ months of lees ageing, culminating in the November 2024 disgorgement.
This limited-edition sparkling wine brings generous, creamy bubbles with a dense, almost chewable core of fruit. It is precise and round.
Each bottle is sealed with a 100% TCA-free DIAM cork.
