Előd Szijjártó's pristinely pure, New World-style single varietal wines need no introduction: the explosive Sauvignon Blanc and the lean Pinot Noir quickly found their place in our selection. However, this is only one half of the winery's history, in which traditional method sparkling wine is gaining more and more space every year. Like the Grower Champagne makers he met in France, Előd carries out every step in-house, from grape pruning to labelling.
During the first two weeks of the harvest, Előd picks grapes only for his traditional method sparkling wines. The bunches quickly reach the winery, where the Pinot Noir and the Chardonnay go straight into the press, and then the must is fermented in cooled tanks. He disgorged this sparkling wine, which included a small amount of reserve wine, after two years of ageing, in May this year, and it gained its current, final form with a dosage of 6 grams. It can be seen that the mousse is slow and spectacular when poured into the glass. The nose is restrained and elegant with citrus oil, white-fleshed peaches, delicious ripeness and butter cake. The palate is firm and refreshing. The precision that’s characteristic of large Champagne houses, yet coming from a small winery in Etyek.
