The continuation of the first, that is last year’s lighter, fruitier rosé traditional method sparkling wine from the 2018 vintage. Pure fruit, lively, elegant, a real ‘one more glass’ type, with strawberry, cherry, delicious brioche, gentle minerality and very subtle bubbles. A classic, small-producer’s traditional method sparkler made completely in Tokaj by Zoltán Demeter, from a blend of Furmint (Újhegy and Kakas vineyards) and Cabernet Franc (Kakas vineyard, where this non-local variety grows on 700 square metres). Rátka’s Újhegy is a place for traditional method sparkling wine with its south to southwest aspect and the Furmint clone that everybody dreams about: the small-bunch variety with irregular berry size and protracted ripening, this way it can be easily selected for traditional method sparkling wine, and it also carries exciting aromas. Made by the most widespread Champagne method, whereby the white base wine was blended with the red wine at the end. It was fermented for another 9 months in the bottle, on riddling racks and it was disgorged at the winery. “Traditional method sparkling wine has a great future in Tokaj. I know it, as its past goes a long way back. In 1829, Baron Miklós Vayi, who travelled around Europe on his father’s money, had already discussed it at great length and wanted to make a ‘Kámpánia’ wine because he regarded both the landscape and all its vineyards suitable for competing with the great icon.” Zoltán Demeter
