The base of this non-vintage blend is the 2021 vintage, complemented by 25% of reserve wines reaching back to base wines from as far as the 2016 vintage.
Sauska was the first to plant Chardonnay and Pinot Noir in the region specifically for traditional method sparkling wine production. The key sites were the higher-altitude vineyards with northern and western exposure, sometimes on calcareous soils, with cooler temperatures and windy conditions. Today, their most important sparkling wine sites are: the cool and windy Istenhegy; the chalky, richly calcareous Padi-hegy; and the volcanic Medve and Birsalmás vineyards.
The carefully selected, hand-harvested grapes were gently whole-bunch pressed. The winery does not use malolactic fermentation or barrel ageing for any of its sparkling wines. The blending takes place in early spring, always following the estate’s own style: a Furmint base complemented by Chardonnay and Pinot Noir (vinified as a white wine).
