Pinot Noir and Chardonnay in a 50:50 proportion, pressed from whole bunches and fermented separately. The blended base wine was aged in tanks, with the lees stirred occasionally. In the end, following a long saturation with bubbles, it was bottled under pressure with 10 grams of residual sugar. It’s at its best when the bottle is super-chilled on opening. Good colour, delicious bubbles, pear on the palate, with subtle acidity.
