In terms of the scale of the wine region, Case Paolin, with nearly 20 hectares of its own organically cultivated vineyards, is a small family estate. For the Col Fondo, they always harvest from the oldest plots on the steep hillside planted with nearly 40-year-old Glera vines. Before pressing, as it used to be in the past, the grapes are kept on the skins for 15-18 hours, which makes the fermented base wine original, atypical, mineral, and distinctive with deep flavours. The second fermentation takes place in the bottle, and the process in fact ends when we open a well-chilled bottle. Until then, the wine develops with its own lees.
