Case Paolin is a family-owned organic estate, where Glera grapes grow on vines of an average age of 30-40 years, and are still harvested by hand. Destemming is followed by 24 hours of skin contact, then gentle pressing. In this traditional process, the second fermentation takes place in the bottle, and there is no disgorging, as the fondo, the lees, is the most important point of the wine's final character. The hot-air balloons on the label commemorate the soldiers of the First World War, who scanned the area around the River Piave in this way. The aromas of yellow fruits are followed by elegant floral notes, then rounded off by acacia and salty notes. The palate is balanced and elegant with mineral, peach and lime.
Emilio Pozzobon founded his estate where his father and grandfather used to work as day labourers. At the Case Paolin family estate, the grapes have been cultivated organically from early on. They work on 20 hectares by the River Piave, and make Proseccos and complex reds from the vineyards of different characters.
