Case Paolin's unique Prosecco, which returns to the roots. The term Col Fondo means ‘with the sediment’ or lit. with the bottom’, as in this ancestral method, the fine lees are not removed from the bottle at the end of production but are left in – a process that serves as a tribute to the founding grandfather, Emilio, since sparkling wines were traditionally made this way in the region. The finished Prosecco appears cloudy in the glass. White flowers, acacia, bread-crust and citrus on the nose, with a delicately creamy mouthfeel. A meeting of elegance and tradition, with a touch of fine minerality.
Emilio Pozzobon founded his estate where his father and grandfather used to work as day labourers. At the Case Paolin family estate, the grapes have been cultivated organically from early on. They work on 20 hectares by the River Piave, and make Proseccos and complex reds from the vineyards of different characters.
