A special Prosecco from Case Paolin that returns to its roots. Col Fondo literally means ‘with the bottom, or sediment’, referring to this ancient method, whereby the lees are not removed from the bottle at the end, but are left inside. It is also known as Sui Lieviti, lit. on the lees. This approach is also a tribute to the family winery’s founder, the grandfather Emilio, as sparkling wines in the region were once made this way. It remains cloudy in the glass. White flowers, acacia, breadcrust and citrus fruits on the nose, followed by a delicately creamy palate. A meeting of elegance and tradition, with subtle minerality.


Emilio Pozzobon founded his estate where his father and grandfather used to work as day labourers. At the Case Paolin family estate, the grapes have been cultivated organically from early on. They work on 20 hectares by the River Piave, and make Proseccos and complex reds from the vineyards of different characters.
