Pietra Fine means ‘fine stone’. Glera (100%) from the hillside that marks the northern border of the Asolo Prosecco DOCG area, from a limestone, steep plantation, from organic cultivation. The grapes were harvested and sorted by hand, followed by a 24-hour cold maceration to intensify the aromas. The second fermentation took place in pressure-resistant tanks, called autoclaves, in which it was also aged for 9-10 months on fine lees, with regular stirring.
Emilio Pozzobon founded his estate where his father and grandfather used to work as day labourers. At the Case Paolin family estate, the grapes have been cultivated organically from early on. They work on 20 hectares by the River Piave, and make Proseccos and complex reds from the vineyards of different characters.
