The vineyards of Cavalier Prosecco still have plenty of mulberry trees today, and the silkworms that feed on the tree leaves used to be called ‘cavalier’ by the locals – which means knight, which is a reference to the movement of the leaves being similar to that of knights. It’s an apt name for a prosecco, which is dominated by violets on the nose, then mainly red apple and wild strawberry on the palate. It’s also characterized by lovely bubbles, refreshing acidity and a broad palate.
