The plantations of Cavalier Prosecco are still crowded with mulberry trees today, the silk worms that fed on the leaves of the trees were called cavaliers, i.e. knights, by the locals because their movements reminded them of the way knights rode their horses. It’s a matching name for a Prosecco with a nose that is dominated by violet and a palate mostly led by red apple and wild strawberry. It is characterised by gentle bubbles, refreshing acids and a broad palate.
