There’s a general consensus that the trump card behind making English traditional method wine is Chardonnay. After the 2014 vintage, the 2015 Blanc de Blancs perfectly supports this statement. A refined composition made with few brushstrokes and delicate shades. It’s elegant, fresh, lean and muscular. Apple compote, citrus and white flowers on the nose. The aromas of ageing evoke flavours of sweet pastry rather than caramel or brioche crust. A complex sparkling wine with many layers in its texture, and a never-ending finish.
The grape must, which came exclusively from the winery’s own vineyards, was divided into fractions (broken into parts and sorted) after whole-cluster pressing, then bottled in April 2016 after tank fermentation, and then disgorged more than 6 years later, in September 2022.
