In the world of vermouth, Chinati Vergano stands as a rare outlier, whereby its scale of production is reminiscent of garage winemaking. Mauro Vergano began experimenting with vermouth in 1970 in his quiet workshop in Asti, initially just for personal consumption. Among Mauro's captivating, vinous vermouths of infinite complexity, the Bianco, which is a blend of minimally processed Moscato and Cortese, became our favourite. These two local varieties complement each other perfectly: the former contributes aromatic intensity, while the latter brings freshness and vibrant acidity.
The botanical profile features dominant notes of thyme, marjoram, basil and oregano, with lemon zest and wormwood providing more pronounced flavours. Made without caramel or red grape varieties, it retains a white, floral aroma with pleasantly bitter-sweet notes. Compared to conventional vermouths, it's an entirely different experience, like drinking liquid grape must, with refreshing flavours, juicy texture and roundness. Best enjoyed chilled on its own, or poured over a large ice cube with soda and lemon zest for a truly special experience. Original.
