The first Copenhagen Sparkling Tea was launched in 2017 as a fusion of innovative Scandinavian gastronomy and is deeply rooted in Asian tea culture, creating an entirely new category in the world of non-alcoholic beverages.
Sommelier Jacob Kocemba noticed the need for non-alcoholic alternatives while observing guests at a renowned Michelin-starred restaurant. His partner, Bo Sten Hansen, joined him in 2017, and their first collaborative product hit the market in May of that same year.
Since then, every bottle has been based on organic, hand-picked teas, with the infusions and blending still overseen by the two founders. The blended base is enriched with a minimal amount of grape must, and through a long saturation process, they achieve the fine bubbles characteristic of bottle-fermented sparkling wines.
The latest addition to the Copenhagen Sparkling Tea range is the fresh and citrusy LYSEGRØN (meaning ‘light green’, pronounced ‘lusegrhon’). It’s a blend of 12 different teas, featuring sencha, green tea and Darjeeling as its base. During the blending process, the goal was to capture the crisp freshness of a classic champagne, resulting in a tea with notes of pear, orange zest, and aromas of lemongrass, citrus and Earl Grey tea. The mousse is subtle, with light flavours.
