Verjus is the juice of green grapes, pressed from unripe fruit – a refreshing, natural source of acidity in both the kitchen and in the glass. This verjus is made from grapes selected from 40-year-old vines in the limestone-speckled Ugar-dűlő. In the spring of 2024, thanks to a sudden warm spell, the vines budded about two weeks earlier than the average of previous years.
At the beginning of August, well before full ripeness, healthy grape bunches were harvested, around two weeks ahead of the actual harvest. The grapes were gently pressed, and the resulting must was transferred into stainless steel tanks, then bottled without sulphur and without pasteurisation.
On the nose, green apple and pear appear, with the varietal notes of Furmint and Hárslevelű subtly emerging. The palate is very fresh and lively, subtly fruity, with its character defined by vibrant, natural acidity. Thanks to its high acidity, verjus is refreshing even as a spritzer, but its true role unfolds in the kitchen: it’s ideal for salad dressings, pickling, sauces and marinades – where lemon or vinegar might be too sharp, verjus provides softer, more natural acidity.
