While most big rum brands bring in cane juice and molasses from other parts of the world, Bacoo makes the rum from pure cane juice grown locally, aged and bottled on the estate. Three important principles define its environmentally-friendly farm and distillery: quality, consistency and distinctiveness. In this spirit, the by-products created during processing are successfully integrated into their natural circulation, or possibly sold on. This white rum is aged for 3 years in ex-bourbon barrels, after which it is filtered to extract the pigments it had picked up, leaving pure flavours of coconut cream, caramelized banana, ripe mango and candied lime. The mythological ghost on the label and the rum’s name of Bacoo refer to an elf-like figure, who in the Caribbean is thought to be found in empty, sealed rum bottles and rewards its owner with the granting of wishes.
