“According to Gábor Czakó, master distiller at Bestillo, there are two types of pálinka – apricot and plum. The founding of the company was immediately followed by the purchase of a suitable site for the growing of Gönc apricots. In 2005, we planted 6 hectares with 2,400 trees on a hillside that is 300 metres above sea level, in Boldogkőváralja-Arka, the safest area in terms of frost risk. After the apricots, the idea of cultivating the plum raw material came eight years ago. Plum was new to us, so we tried 15 varieties to see what it can do. Even with the raw material we bought, we thought in a way that broke the mould in terms of floral, fresh flavours, which quickly proved itself. Finally, we selected four varieties with ideal ripening times and good substance for manual harvesting. The work actually began here.

Since then, we’ve been doing our best to ensure that the core values characteristic of the variety are reflected in the harvested fruit: through regular laboratory tests, we constantly ask the trees what they need, and we give it to them; we condition the trees to self-protection, we do not destroy the environment around them; we ‘blew up’ the ground near the trunk in order to increase the efficiency of nutrient absorption, we provide the necessary amount of water with an irrigation system; we cooperate with a German specialist who tests the varieties – so we pamper our trees, and this is evident from the result. From 6 hectares, 4,000 trees of Haroma, Presenta, TopFive and Toptaste provide the raw material for the first vintage of 2023. In honour of this, the label has turned blue – and since it was given the colour characteristic of the fruit, we also touched up the Gönc apricot one, which has been dressed in the airy colour reminiscent of the flower. They suit each other well, they are beautiful together – like a couple!” Monika Czakó.
