The native Mexican spirit that is made by the fermentation and distillation of various agaves. The most famous areas are located in the northern part of the country and in the south, in Oaxaca state. Its method of production and technology originates from the 16th century, with artisanal processing. The smoky character is obtained by placing tree branches in a pit and then lighting them while raising a pile of stones over them, and then putting chopped agaves on the stones. They are then covered with bagazo, i.e. cooked and mashed agave fibres, and finally the whole thing is covered with earth or a canvas tarp for 3-15 days. The labels provide detailed information on the origin, variety and processing. The name Joven means a young Mezcal.
