In the search for the perfect Mendoza Malbec, the winemakers and viticulturists of Kaiken identified three micro-terroirs worth planting and experimenting with. Two of these are located in the Los Chacayes area, one on the northern and one on the southern bank of the Arroyo Grande River, at an altitude of 1,250 metres above sea level. The viticultural and winemaking practices are the same for both wines: after hand harvesting and careful manual sorting, a 4-day cold maceration is carried out to enhance aromatic intensity. Fermentation is partially spontaneous in concrete tanks, where the wines then continue to age for a further 12 months. The only real difference lies in the diversity of the sites. In the case of Norte, the defining feature is a compact, calcium-rich, sedimentary subsoil, where the roots are unable to penetrate deeply.
